BACK TO TABLE OF CONTENTS

Ingredients

  • 2 cups cooked rice (day-old preferred)

  • ½ cup Manny’s Ultimate Michelada

  • 1 tablespoon soy sauce

  • 1 tablespoon vegetable oil

  • 1 egg, lightly beaten

  • ½ cup mixed vegetables (peas, carrots, corn)

  • 2 green onions, chopped

Directions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.

  2. Add beaten egg and scramble quickly until just set.

  3. Remove from pan and set aside.

  4. Add mixed vegetables to the same pan and cook for 2 minutes.

  5. Add rice and stir to break up any clumps.

  6. Pour in soy sauce and Manny’s Ultimate Michelada. Stir constantly for 3–4 minutes.

  7. Return scrambled egg to the pan and toss to combine.

  8. Garnish with chopped green onions and serve hot.
